Instructions
Whisk cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar substitute, salt, and pepper in a bowl. Stream in olive oil to emulsify.
Place chicken thighs in a zip bag, pour in marinade, seal, and massage to coat. Rest at room temperature 15 minutes (or refrigerate up to 30 if time allows).
Preheat grill to medium-high (about 425°F). Oil grates.
Remove thighs from marinade letting excess drip off; discard remaining marinade. Grill 5-6 minutes per side until internal temp reaches 170°F and juices run clear.
Rest 5 minutes before serving to retain juices.
